The classic Russian appetizer with Caviar
An exquisite and elegant way of tasting caviar is in the Russian style: the traditional blinis (small pancakes) with their soft texture and neutral flavour; the sour cream that blends perfectly with the last and most important ingredient: caviar. This preparation featuring this perfect trio is what Kenoz wants to show us in a simple step-by-step guide.
Preparation of Blinis
- Heat the yeast using some milk. Leave to stand for 5 minutes.
- Sieve the flour and place in a bowl. Add the 3 yolks, the rest of the milk and season with salt and pepper to taste. Mix thoroughly until mixture acquires a thick but liquid contexture.
- Add the yeast and leave to stand for 15 minutes at room temperature.
- Whisk the egg whites until stiff. Slowly add it to the mixture.
- Heat a frying pan on medium heat with some oil and butter. Place some mixture on the frying pan and fry 1.5 minute per side until the small pancakes are ready.
- Let cool before serving.
Preparation of the Sour Cream
- Beat the ingredients until obtaining a heavy cream.
- Over cooled blinis, serve a teaspoon of sour cream on each of them. Gently garnish with a teaspoon of caviar on the top of each blinis. Serve immediately.
Note: When serving the caviar, remember to use a mother-of-pearl spoon, or, if not available, a plastic or other neutral material spoon, since metal will oxidate the flavour of the caviar.
